Well, I'm part S-E Asian, so the concept of over seasoning the meal is something I am entirely unfamiliar with.Well... I've definitely over-salted my fair share of stews when I was first perfecting my recipes, since I'm a trial and error kind of guy. You can add more beer or more water to dilute the saltiness... but it just doesn't taste right afterwards.
Idunno, when I over-salt something I can hear the cells in my body shriveling up and dying. Lol. Under-salted is definitely preferable to over-salted. Under-salted you can still add a little bit more afterwards and salvage the meal. But once it's been over-salted, you really can't salvage it and still have it taste decent.
