Just my observation, but here is why I believe we find dolphins so perfect as potential zoo partners.
There are several things that set dolphins aside from most animals we zoos form relationships with:
They are probably as intelligent, perhaps more intelligent, than humans.
They can easily earn their own living in the wild and don't need a human to protect them, giving them parity in a relationship..
They have awesomely beautiful and muscular bodies.
They have a high level of interest in recreational sex, and a mastery of their environment that allow them the spare time to indulge in it.
Add to all that the carefree beauty of almost all zoo sex (eg: fucking for the pure pleasure of it) and you have perfection!
