I'm not sure my stories qualify as "fantasy novels," but there is a fair amount of character development. Most of the books are rather old and the authors weren't particularly familiar with canine anatomy or dogsex either. You might want to try looking here. There are some books there that have been written recently.

Back in the 70s, I think, Greenleaf (IIRC) published quite a few bestiality books (along with other taboo topics). You can find them on various torrent sites occasionally. If I can find my collection, I'll see if I can't upload it here. That might take a while...
