To me it tastes like a citrusy parsley. Funnily enough my father states that it tastes like soap to him, but he didn't pass those genes onto me. It's not about preparation, it's genetic....Down here in Tejas, where our food culture was heavily influenced by our mexican neighbors, cilantro is less an herb and more a way of life. Go to any taqueria, food truck, friend's grandma's table, any sit-down dine-in mex restaurant, or be warmly accosted by surprise offerings from parking-lot vendors who sidle up behind you calling "tamales?". Guarantee you'll find those green leafies in just about everything on the menu, maybe except the tamales lol. Cilantro is nearly always paired with two essentials: diced white onion, and lime. Whoever espoused that it takes like soap is probably not preparing it correctly -- namely, with the onion and lime aforementioned. If eaten plain and raw, I'm going with floof's citrusy-parsely but YTMV, Your Tongue May Vary.
